Gum arabic is listed as a single additive — E414 — but choosing between its two source trees is a commercial decision, not just a botanical one. Acacia Seyal, long treated as the cheaper cousin to Acacia Senegal, is now riding a prebiotic-fibre wave that is reshaping demand for both species. This note sets out the practical difference, and what a well-written specification should say.

Acacia Senegal — the hard gum

Acacia Senegal yields the hard gum: dense, glassy amber nodules that dissolve into a solution with real interfacial activity. Its defining property is emulsifying performance. The protein-rich fraction of its arabinogalactan–protein complex anchors itself at the oil–water interface and holds droplets apart for months, which is why Senegal remains the reference for beverage emulsions — citrus oils, cloud systems — and for spray-dried flavour encapsulation, where the gum must form a tight film around a volatile core.

It is the more expensive of the two species, and for these uses the premium is earned. Where a finished product depends on an emulsion staying stable through its shelf life, Senegal is the tool for the job.

Acacia Seyal — the friable gum

Acacia Seyal, the friable gum — talha in the trade — breaks more easily, runs paler to reddish, and costs less. For years it was treated as the second choice. That reading is now out of date. Seyal is the engine of the acacia-fibre boom: roughly ninety per cent soluble dietary fibre, well tolerated at meaningful doses, fermented slowly by the gut microbiota — the profile behind its rise as a prebiotic ingredient.

The timing is not accidental. Gut health has moved from niche to mainstream, and GLP-1-era formulation — smaller portions that must still deliver fibre and satiety — creates demand for exactly what Seyal offers. It also does honest work in confectionery: texture, crystallisation control, coating. Seyal is not a lesser Senegal; it is a different raw material with its own growth curve.

The scale of this shift is measurable. The market for acacia fibre as a prebiotic ingredient was worth close to 790 million dollars in 2024 and is projected to reach around 1.56 billion dollars by 2033, a compound annual growth rate near 7.8 per cent (Growth Market Reports, 2026); a separate estimate puts acacia-fibre-powder volumes growing near 5.8 per cent a year through 2035, pushed by clean-label reformulation and rising interest in gut health (IndexBox, 2026). Manufacturers are folding it into yogurts, baked goods and beverages as a natural stabiliser that doubles as a prebiotic (Nexira, 2026). Acacia fibre is also one of the better-researched prebiotics: published data support satiety, gastrointestinal tolerance and blood-glucose management, and early animal-model work has associated it with GLP-1 activity — a lead worth watching, not a claim we make ourselves (Global Prebiotic Association, 2026). The practical result for a buyer is that Seyal is no longer priced only against Senegal; it is priced against its own demand curve, and MAMO supplies both species, graded and documented at origin.

Grades, sorting, and what to specify

Both species are traded in grades 1 and 2. The difference is decided less by the tree than by the work done after harvest: hand-sorting removes bark, sand and dark or dusty nodules, and grade 1 is simply the fraction where that work has been done most thoroughly. A buyer who has watched lots being sorted at origin learns quickly that sorting quality matters as much as species.
